The Legend of You Tiao

You Tiao‘s original name is You Char Kwai, and it translates to “oil-fried devil.” This name reveals the Chinese folklore which gave rise to the dish. According to legend, the loyal general of ancient China, Yue Fei, was betrayed to death by the traitor Prime Minister Chin Hui. When news of this spread to commoners, a hawker in Hangzhou city put two dough sticks together to represent Chin Hui and his wife, and fried it in boiling oil to express his anger towards them.
