About Noodle Hawkers in the 1950s
Before hawker centres and food courts, hawkers roamed the streets of early Singapore with mobile stalls, using sound to announce their presence and attract hungry customers.
Sellers of mee, or noodles, would strike a stick on a bamboo slab or use bamboo clappers, thus producing the “tok-tok” sound which gave rise to this colloquial name. In fact, fishball noodle sellers differentiated themselves from other noodle sellers (for example wanton noodles) by producing a different sound with slightly different implements.
